Shio-Koji is a wonderfully miraculous condiment. It is koji in brine. It may sound rather simple, but it has amazing functions which you can’t find in anything else! Just by marinating meat, fish or vegetables with it, these will be transformed into incredibly juicy, yet firm products, rich in Umami. The world’s No.1 restaurant Noma excitingly introduces it in their newly published renowned book, The Noma Guide to Fermentation (p265 – 267)
